Hey everyone! I’ve had a request to include meal ideas that are simple to make and inexpensive as well. I will be featuring some of my favorite recipes such as my meatball sandwich, egg rolls cambodian style and linguini with clam sauce. However, the first recipe ever featured here will be the Rollo CookiesRoloCookies

A little background on this recipe. While in High School, I was dating a girl whose family made the best fresh cooked homemade meals. The girl, who I will call Taryn, also had a big sweet tooth. She would always bake different cookies or make homemade candies to my delight. My favorite dessert she made was her Rollo Cookies. There was something special about biting into a soft chocolate cookie, crusted with sugar to surprisingly find a warm caramel center. These cookies were best when left to cool overnight and then quickly warmed up in the microwave before enjoying. The oozing, gooey center was like finding a dollar in a pant pocket you’d long forgotten. Each bite is a surprise delight. Sadly, Taryn would not give me the recipe for these cookies. Her mother teased her that she was jealous I would cook them better and that she was angry I would take credit for the recipe. Well, after doing much research and trial and error, I found this recipe. The only modification I made was to use more flour to provide a better consistency with which to work. Be sure to use pure and not imitation vanilla. The taste difference will be huge! Also, butter is a better substitute for margarine for a better taste.

Another cool back story on this recipe is that I’ve used it many times to share with neighbors, give to friends, impress landlords, and pretty much any olive branch offering. That’s the best thing about baking is that if a dish is personal to you, then you can easily extend those experience by sharing a plate!

ROLLO COOKIES
By Jocelyn Loos – Moose Jaw, Saskatchewan

2 1/2-2 3/4 cup flour enough so dough is not sticky
3/4 cup cocoa
1 tsp baking soda
1 cup white sugar
1 cup brown sugar
1 cup margarine
2 tsp vanilla
2 eggs
48 rollo chewy carmels
Beat sugars and margarine until fluffy, add eggs and vanilla and beat well.  Add flour mixture and blend well.  Cover and cool dough in fridge for about 1/2 hour.
Shape into1″ ball around caramel, covering it completely.
Bake 8 minutes at 350*, DO NOT OVER BAKE, they will look quite soft.
Cool in pan slightly then move to a piece of waxed paper.
Cool completely you can melt white chocolate and drizzle over top or eat as is.

Why can’t American candy be as good as the Nestle options up north and over the pond? I love Smarties (Canadian style)!

    I’m definitley looking forward to this site. Try adding some foods that are easy to make and fairly healthy to eat. We could use some good dinner ideas.

      You bet bro. I have a few comfort foods that are great dinner ideas coming up soon. I have my own recipes and some my friends are submitting that I’ll try out and cook myself to give my opinion.
